For The Cakes

  • 1 batch @ketocandygirl Lemon Cookies It takes approximately 2 cookies for 1 pie crust (using a 4” tin).
  • 1 box Simply Delish Vanilla Pudding
  • 1 cup of heavy cream
  • ¼ cup lemon juice
  • 1 tbsp lemon zest

For The Garnish

  • ¼ cup whipped cream
  • 1 slice of lemon
  • 2-5 blackberries
  • ¼ cup crust crumbles


For The Cakes

  • Make one batch of @ketocandygirl Lemon Cookies as directed on the package. 
    1 batch @ketocandygirl Lemon Cookies
  • While those are baking, make a batch of Simply Delish Natural Instant Vanilla Pudding with heavy cream for a thick pie filling.
    1 box Simply Delish Vanilla Pudding, 1 cup of heavy cream
  • Add lemon juice and lemon zest to the pudding and refrigerate.
    1/4 cup lemon juice, 1 tbsp lemon zest
  • Once cookies are done baking, let cool enough to handle. Crumble and use those cookie crumbles to form a crust in mini pie tins.
  • Pop the formed crust in the freezer for about 5 minutes. Once set, fill with the pudding. 

For The Garnish

  • Garnish pies with whipped cream, a lemon slice, some crust crumbles and blackberries. Enjoy!
