Minty Mocha Chocolate Donuts

Ingredients

  • cups organic heavy cream
  • 1 sachet Simply Delish Chocolate Pudding
  • 2 eggs
  • ¼ cup granulated sweetener
  • ¼ cup chocolate protein powder
  • ¼ cup black cocoa powder
  • ½ tsp baking powder
  • 1 tsp instant espresso
  • 4 drops One on One Flavors' Mint
  • pinch salt

Toppings

  • 1 cup sugar-free chocolate chips
  • 2 tsp coconut oil
  • ½ cup sugar-free white chocolate mint chips

Instructions

  • Preheat oven to 350°F and grease your donut pan.
  • Blend heavy cream and pudding with hand mixer. This will be thick but will loosen up when you add the eggs.
  • Add eggs one at a time blending well with each addition.
  • Add remaining ingredients and blend well.
  • Spoon into donut pan/mold and bake for 17 minutes. These will rise up slightly over the pan but will deflate some as they cool.
  • Cool completely and prepare toppings.
  • Melt in microwave chocolate and oil. I do this in 15 second increments until melted and smooth. Pour chocolate over donuts and spread smooth.
  • Melt white choclate an oil in the same manner. Drizzle over donuts.
  • Toss some white chips in some green luster dust and chopped finely. Sprinkle these over half the donut for a beautiful and delicious textural contrast.
