Vegan Mint Chocolate Chip Pudding Bars
They're chocolatey, minty, and made with plant-based ingredients! These minty-fresh bars are the perfect dessert, but you can also enjoy these as a snack, and dare we say breakfast!

Servings: 6 bars
- 1 tbsp ground flax
- 2 tbsp water
- ¾ cup cooked white beans
- the flax egg
- ¼ cup oats
- 1 scoop vegan vanilla protein powder
- ⅓ cup applesauce
- splash vanilla extract
- splash peppermint extract
- 1 tsp baking powder
- 1 tbsp spirulina totally optional, just adds a pretty color
- chopped chocolate bar or chocolate flavored protein powder
Vegan Chocolate Frosting
- 1 sachet Simply Delish Chocolate Pudding
- 1¼ cups almond milk
Preheat your oven for 350°F and make a flax egg.
Let the flax egg gel for 5 minutes.
Blend all of the batter ingredients together.
Stir a chopped chocolate bar or chocolate flavored protein bar into the batter (I used @kizeconcepts bar) and pour into a parchment lined pan.
Bake for 40 minutes.
Let cool completely before spreading some chocolate pudding on top for the frosting and adding more chopped chocolate on top!
Mix together the almond milk and Simply Delish Instant Chocolate Frosting for 2 minutes.
