Red Velvet Moon Pies
One of our very talented foodie friends, Lori, came up with this cute, low-carb dessert called Red Velvet Moon Pies! This recipe is a twist to the classic red velvet cake, except, in cookie form! Servings: 6 servings
- 1 package Zen Sweet Life Snickerdoodle cookie mix
- 4 tbsp butter melted
- 1 egg
- 1 tsp red velvet baking emulsion
- 1 sachet Simply Delish Vanilla Pudding
- 1½ cups heavy whipping cream
- ⅓ cup One on One Flavors mini marshmallow
- 4 drops One on One Flavors vanilla cupcakes
- ½ cup sugar-free chocolate chips
- 2 tsp coconut oil
Preheat oven to 350° F. Line baking sheet with parchment paper.
Add cookie mix to bowl along with melted butter, egg and baking emulsion. Mix well using a hand or stand mixer.
Scoop onto baking sheet with a small cookie scoop.
Bake 9 minutes and cool completely.
Add heavy cream to a bowl along with flavoring. Sprinkle pudding mix in and whip until thick and creamy.
Add marshmallows and mix to combine.
Sandwich filling in between two cookies. I used my medium cookie scoop to do this and it portioned out perfectly.
For the topping add chocolate chips and coconut oil to bowl and microwave in 15 second intervals until you can stir it smooth.
Pour over cookies and top with sprinkles.
