Pumpkin Patch Pudding Pops

Ditch the heavy pumpkin lifting, and bring the pumpkin patch home. These fun, decorative pudding pops taste delicious but look like mini, little pumpkins, how fun! With only four ingredients needed, these festive pops will be a crowd favorite at your next Halloween party.

Chocolate Filling

Butterscotch Coating

  • 2 cups @lilys_sweets sugar-free butterscotch baking chips

Instructions

Chocolate Filling

  • Make one box of Simply Delish Instant Chocolate Pudding Mix according to package instructions.
  • Once the pudding is made, add unsweetened cacao powder (You can also use sweetened cocoa powder however, it doesn’t have as many health benefits). A very thick, fudgy mixture will form.
  • Grease your hands and begin forming the pudding mixture into 1 inch size balls (Makes about 10-12).
  • Place them on a parchment lined baking sheet. Insert a cake pop stick into the top all the way down to the bottom.
  • To make they look more like pumpkins. Use a butter knife to create ridges in the sides of the ball.
  • Place them in the freezer to firm up for an hour

Butterscotch Coating

  • Melt 1-2 cups of @lilys_sweets sugar-free butterscotch baking chips over a double boiler in a tall glass cup.
    The color is naturally a little orange however, you can add another drop of food coloring to boost the color.
  • Fully dip your fudge pops into the butterscotch chocolate and place them back on the parchment baking sheet.
  • Once completed, place them back into the freezer to let the chocolate set.
  • Dye the remaining chocolate green and add to a small plastic bag. Cut a tiny hole in the tip and pipe little green vines on the top of the pumpkins.
  • Enjoy and store the remaining pops in the fridge!
