Paleo Chocolate Raspberry Bites

First we eat desserts, then we do everything else.

  • 8×8 baking pan
  • food processor


Raspberry Cheesecake

  • 1 cup soaked raw cashews
  • cup dairy free cream cheese from @kitehillfoods
  • ½ packet Simply Delish Raspberry Jel
  • 2 tbsp powdered monk fruit
  • cup raspberries
  • ¼ cup nut milk

Chocolate Granola Crust

  • 2 cups of your favorite granola or @wildwayoflife Chocolate Grain Free Granola
  • cup melted paleo chocolate 
  • 1 tbsp melted coconut oil
  • ¼ tsp Himalayan salt


  • Make the crust by first blending the granola in a food processor until it reaches a crumble consistency.
    2 cups of your favorite granola
  • Add to a bowl and mix in the melted chocolate and coconut oil.
    1/3 cup melted paleo chocolate , 1 tbsp melted coconut oil
  • Press into an 8×8 baking pan lined with parchment paper and stick in the fridge.
  • Blend together your soaked cashews and nut milk in a food processor. Blend until smooth then add the rest of your ingredients and continue blending.
    1 cup soaked raw cashews, 1/2 packet Simply Delish Raspberry Jel, 2 tbsp powdered monk fruit, 1/3 cup raspberries, 1/4 cup nut milk, 1/4 tsp Himalayan salt, 2/3 cup dairy free cream cheese from @kitehillfoods
  • Once everything is well incorporated, pour over the crust layer and then stick back in the fridge to set.
  • Once set, cut into 16 pieces and enjoy! For added yumminess, top with fresh fig slices and freeze dried raspberries.
