Ingredients

  • cups flour of choice this recipe uses coconut flour
  • ½ cup Lakanto monkfruit golden sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 3 ripe bananas mashed
  • 1 packet Simply Delish Banana Pudding
  • ½ cup vanilla yogurt or your choice of vanilla yogurt
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 dash cinnamon
  • 1 Lily Sweets white chocolate bar

Instructions

  • Preheat oven to 350° F and liberally spray a mini loaf pan with nonstick cooking spray (could also do one large loaf)
  •  In a large bowl, mix together all dry ingredients (besides pudding mix)
  • In another bowl or stand mixer, whisk together all the wet ingredients plus the pudding mix until well combined.
  • Fold wet and dry ingredients together and pour into baking pan.
  • Bake for 45-50 minutes. You are looking for the edges to be golden brown and the middle just set. Since it is so moist in the middle it’s not going to bake regular banana bread so keep that in mind.
  • Remove from oven and let cool on a wire rack.
  • Flip over and drizzle with melted Lily's Sweet white chocolate.
