Who doesn't love the classic dessert, Flan? Typically, this dessert is created using dairy-based ingredients. However, this healthy recipe is super special! This vegan flan recipe is created using only plant-based ingredients.

Ingredients

Caramel

  • 1 tbsp coconut oil
  • ½ cup allulose
  • 4 tbsp sugar-free maple syrup or molasses
  • ½ cup coconut cream
  • ½ tsp vanilla extract
  • pinch of salt

Custard

  • 2 cups unsweetened canned coconut cream
  • 4 tbsp sugar-free maple syrup
  • 1 tbsp arrowroot powder
  • 1 sachet Simply Delish Unflavored Jel

Instructions

Caramel

  • Add all ingredients to a pot, bring to a boil, then simmer to reduce.
  • Once thickened to right consistency, remove from heat and submerge saucepan in ice bath to stop cooking.
  • Transfer to a container and let cool.

Custard

  • Add all ingredients to a saucepan except for unflavored jel, and stir with a whisk.
  • Bring to a boil, stirring frequently, then reduce to a simmer for 2 minutes.
  • Whisk in the Simply Delish Unflavored Jel and remove from heat.

Assembling the Flan

  • To prep for custard, spray 2 ramekins with non stick spray.
  • Spoon caramel sauce into the ramekins to cover the entire bottom.
  • As soon as custard is removed from heat, pour into the ramekins on top of the caramel. Pouring over the back of a large spoon helps for even pouring.
  • Let custard sit in the fridge to set completely for at least 2 hours.
  • Loosen edges of the custard with a knife when ready to serve and flip onto a plate.
  • Pour more caramel sauce on top and enjoy!
