Simply Delish Summer jelly Pudding
Ingredients
- 500ml of apricot, passion fruit or peach juice

1 packet of Simply Delish sugar pineapple jelly (see below for sugar free option)
- 125ml fresh cream / or cream substitute
- Greased ring mould or small ramekin dishes
Directions
- In a large saucepan heat the juice over moderate heat.
- Add Simply Delish jelly powder and stir until dissolved, once boiling remove from heat.
- In a separate bowl gently whisk the cream using a whisk or fork until smooth.
- Add the Simply Delish jelly mixture into the cream and gently whisk the entire mixture together. Do not over mix.
- Grease ring mould / ramekin dishes and pour mixture into them.
- Allow the mixture to cool.
- Once cool, refrigerate and allow to set for 2 hours.
Great on its own or extra delicious when served with Simply Delish Vanilla Pudding.
Can decorate with fruit.
For Diabetic option adjust recipe as follows :
- Use Simply Delish Zero pineapple jelly.
- Use water instead of juice (use 450ml water instead of the 500ml juice)
