Simply Delish Summer jelly Pudding

Simply Delish Summer jelly Pudding



  • 500ml of apricot, passion fruit or peach juice
  • 1 packet of Simply Delish sugar pineapple jelly (see below for sugar free option)
  • 125ml fresh cream / or cream substitute
  • Greased ring mould or small ramekin dishes



  1. In a large saucepan heat the juice over moderate heat.
  2. Add Simply Delish jelly powder and stir until dissolved, once boiling remove from heat.
  3. In a separate bowl gently whisk the cream using a whisk or fork until smooth.
  4. Add the Simply Delish jelly mixture into the cream and gently whisk the entire mixture together. Do not over mix.
  5. Grease ring mould / ramekin dishes and pour mixture into them.
  6. Allow the mixture to cool.
  7. Once cool, refrigerate and allow to set for 2 hours.


Great on its own or extra delicious when served with Simply Delish Vanilla Pudding.

Can decorate with fruit.


For Diabetic option adjust recipe as follows :

  1. Use Simply Delish Zero pineapple jelly.
  2. Use water instead of juice (use 450ml water instead of the 500ml juice)

These combinations can be used for both sugar free jelly and sugar jelly.
